  • 150 g — Onions

  • 20 ml — Olive oil

  • 700 g — Potatoes
  • 500 g — Cooked white beans, drained
  • 60 g — Gluten-free rice flour
  • 500 g — Carrots
  • 40 ml — Olive oil

You will also need water, salt and pepper.

Method

  1. Peel the potatoes. Cook them in simmering water until tender and drain well.
  2. Mash the potatoes and the beans. Stir in the rice flour and leave to cool slightly.
  3. Shape eight small cakes. If the mixture is too wet, let it cool for longer.
  4. Heat 30 ml of oil in a frying pan. Cook the cakes in batches, about 5 min per side, until golden.
  5. Peel and grate the carrots. Dress them with the remaining 10 ml of oil and serve with the cakes.
